I bought a papaya, so why not? I made this as a frozen drink and used some papaya seeds as garnish, and they turned out to be a really nice textural addition and flavor note in contrast with the drink.
The apricot and lime acid make for a fantastic flavor profile!
Lime Acid:
10:1 water:citric acid by weight
10:1 water:malic acid by weight.
2:1 citric:malic acid solutions.
