1 oz sotol
1 oz gin
½ oz amaro Montenegro
1 oz fresh grapefruit juice
¾ oz fresh lime juice
½ oz sage-chile agave syrup
tiny pinch salt
Combine ingredients, shake with ice, and strain over fresh ice (or dirty dump) into chile and salt-rimmed glass.
Sage-chile agave syrup
simmer ½ cup water and ½ cup sugar with a handful of fresh sage leaves and some dried or fresh chiles of your choice (not too much, and not too hot). When sugar is dissolved, drizzle in some agave syrup and let cool. Strain.
