2 oz gin
¾ oz lemon juice
½ oz simple syrup
1 cup or so arugula
dash lemon bitters
2-3 oz tonic water
Muddle arugula enough to release flavor and color but not enough to make a puree. Combine with gin, lemon juice, syrup, and bitters and shake well with ice. Fine strain over an ice chunk, top with tonic water, stir gently, and garnish with arugula.
