1 ½ oz aquavit
½ oz Cynar
¾ oz beet juice
¾ oz lemon juice
½ oz agave syrup
~2 oz ginger beer
Shake all but ginger beer with ice and strain into an ice-filled Collins glass. Top with ginger beer and garnish with fresh dil.
Beet juice: peel at least two beets and chop them into large pieces. Add to a blender with just enough water to get it to blend smoothly. Fine strain. Pulp can be used to infuse spirits or make syrup!
